Jambalaya

Another installment of my recipe's from
1/2 pound andouille pork sausage, cut into slices
1 small oninon, chopped
2 green bell peppers, chopped
2 garlic cloves, finely chopped
1 tsp paprika
1 tsp salt
1 tsp dried oregano
1/2 tsp dried thyme
1/8 tsp cayenne pepper
1 (28 oz) can diced tomatoes
1 cup chicken broth
1 pound shrimp, shells & tails removed
4 scallions, finely chopped
I used brown rice to thicken later...

Cook the sausage in a large, deep pot. As it browns,
add a little olive oil to the pan and
then saute' the onion and bell peppers
until onion becomes soft. Ad the garlic and spices,
then tomatoes and chicken broth.
Bring to a simmer with the lid on it for 10 minutes.
If you would like to thicken the sauce,
add cooked rice and simmer for an additional 10 minutes.
Add the shrimp ans simmer until cooked through
and pink, about 5 minutes.
Garnish with scallions and serve.

The finished product!!!

I Did it AGAIN!!!!

Another half marathon, 13.1 miles...
# 3 in the books!!

Awaking Sunday morning at 4:30AM following
the time change was the first challenge of the day...
We arrived at 5:30AM with plenty of time to spare,
allowing me time to prepare for my run.

I had time to meet up with some running friends
Shelley & Tracy and we chatted about our
individual game plans.
I had a tough week prior with an ITB issue,
so I knew that this race was going to be more
than just a mental challenge,
I would be pushing my body harder.

I had a really good run until about mile 7, that is when my
knee began to tell me it wasn't happy with me!
It was about this time that Dear Hubs
caught up to me on his bike.

DH rode along with me on the course for about 4 miles
and did a great job distracting me
from my knee with random stories
and pointing out sites!

Here I am about mile 9 "RUNNING HAPPY"...
I finished 10 minutes ahead of my goal and achieved
a personal record for the half marathon.

My finish time was 2:20:48!!!
Not bad for this 50 year old lady!!

Happy Birthday Retired Fireguy!!!

Today is my dear husband, best friend,
and favorite fitness buddy's birthday!!!
For having a tough childhood he has turned it around into
a GREAT life...
He has been and continues to be a wonderful role model
for our children and is the BEST provider for his family!!!
As is his unselfish nature he will be spending his birthday morning
supporting me as I run a half marathon...
He is THE BEST thing that has happened in my life
and I wish him a very happy birthday!!!
