Moroccan Chicken

I'm working to expand my culinary knowledge by
trying a new recipe a week...

This week was Moroccan Chicken ~
I found the recipe in a new cookbook,
The Primal Blueprint Cookbook.

Here is a look at the ingredients...

The recipe:

2 tbsp extra virgin olive oil
1 onion finely chopped
3 chopped cloves garlic
1 tbsp ginger
1/2 tsp Tumeric
1/2 tsp Cinnamon Ground
1 1/2 tsp Paprika
1/2 tsp Coriander Seed
1/2 tsp Ground Cumin
1/4 tsp Cayenne Pepper
4-6 chicken thighs - boneless,skinless
14 1/2 oz canned tomatoes, diced

2 cups water
1/2 cup chopped cilantro
2 tsp Lemon juice
2 cups green beans
1/4 cup Fresh Mint (optional)


Saute onion, garlic & ginger in oil until soft and golden brown. Add spices and saute' a minute more. Then add chicken, tomatoes, water, cilantro & lemon juice. Simmer with a lid for 30 minutes. Add green beans and mint. Simmer a few more minutes until green beans are done. Serve over grated cauliflower, rice or pasta.

Looks great. That's quite a combination of flavors. I don't think I've heard of Moroccan Chicken before. Maybe I'll try this the next time I feel adventurous.

Sounds yummy. I think I have almost all the ingredients on hand, so maybe this will be tonight's meal! Thanks!
