Jambalaya

Another installment of my recipe's from
1/2 pound andouille pork sausage, cut into slices
1 small oninon, chopped
2 green bell peppers, chopped
2 garlic cloves, finely chopped
1 tsp paprika
1 tsp salt
1 tsp dried oregano
1/2 tsp dried thyme
1/8 tsp cayenne pepper
1 (28 oz) can diced tomatoes
1 cup chicken broth
1 pound shrimp, shells & tails removed
4 scallions, finely chopped
I used brown rice to thicken later...

Cook the sausage in a large, deep pot. As it browns,
add a little olive oil to the pan and
then saute' the onion and bell peppers
until onion becomes soft. Ad the garlic and spices,
then tomatoes and chicken broth.
Bring to a simmer with the lid on it for 10 minutes.
If you would like to thicken the sauce,
add cooked rice and simmer for an additional 10 minutes.
Add the shrimp ans simmer until cooked through
and pink, about 5 minutes.
Garnish with scallions and serve.

The finished product!!!
